Wash the meat and lightly dab it with absorbent towels. When it is well drained, we cut it into suitable cubes.
Heat the oil in a deep, thick pan. Put the meat cubes and let it simmer until all the water left evaporates and the meat is nicely browned.
After the meat is evenly browned, add the chopped onion. Leave the pan on the right heat for the onion to soften (10 minutes), then put the sliced garlic.
Extinguish with a few tablespoons of warm water and leave the pan covered, over medium heat (10 minutes).
Add the diced tomatoes, a few tablespoons of warm water (to prevent burning), salt, pepper, paprika and thyme.
Boil with a lid for about 30 minutes on medium heat.
In the last minutes we taste the spices and add more if necessary.
Turn off the heat and sprinkle the finely chopped parsley on top.
Serve with fresh bread, polenta, pickles, cream, various garnishes (rice, potatoes, pasta)!
