  • for countertop:
  • 6 eggs

  • 6 tablespoons flour
  • 3 tablespoons cocoa
  • for dark chocolate cream (ganache cream)
  • 250 ml liquid cream
  • 250 g bitter chocolate

  • 250 g white chocolate

  • 200 ml water
  • 2 vanilla cappuccino sachets
  • 150 gr sugar

  • 200 ml fresh

Method of preparation

First we prepare the top and then the chocolate cream of the cake.

We break the eggs and separate the egg whites from the yolks. Put the yolks in a bowl and rub them with the sugar until it melts. In another bowl, beat the egg whites with a pinch of salt until they harden. Add the yolks over the beaten egg whites and mix them slowly with a spoon. Mix the flour with the three tablespoons of cocoa. After that, gradually incorporate this mixture of flour, cocoa in the composition of egg whites and yolks. Pour the dough obtained in the oven tray, which we cover in advance with baking paper and bake over medium heat. As soon as we leave the top to cool, we prepare the creams and the syrup.

In a heat-resistant dish we put liquid cream, broken chocolate in pieces. Put all the ingredients in a bain-marie and leave them until the chocolate melts, stirring from time to time. We will then keep the chocolate cream in the fridge for two or three hours (in order to harden it and beat it well). After the chocolate cream has hardened, mix / beat it until it doubles in volume. We do the same for both creams.

For syrup preparation boil the water together with the sugar and the sachets of cappuccino until the sugar dissolves, then let it cool.

Assemble the cake: Slice the well-cooled countertop into 3 equal parts, syrup the first countertop obtained then add the black ganche heap, place the next countertop, syrup it then spread the white ganche heap, add the next countertop and syrup it.

Cover the obtained cake with a layer of whipped cream and then place the fondant sheet.
