Green lentils deserve more attention from us. Especially in the cold period, when our body consumes a lot of energy to produce heat.

Green lentils boil harder than red lentils. We don't need to soak it, we just wash it well and use it.

Lentils are common in Asian, African and Middle Eastern dishes. It is rich in fiber, protein, minerals (iron, zinc, phosphorus, magnesium), vitamins B1 (thiamine), B5 (pantothenic acid), B6 ​​and B9 (folic acid).

The ratio I use for green lentils is 2 to 1: 2 cups of water, for a cup of green lentils.

Today I chose to make a green lentil dish at Crock-Pot.

  • 100g green lentils
  • 2 white onions
  • 1 carrot
  • 1 white potato
  • 2 tomatoes
  • Salt, white pepper, garlic, paprika.

We prepare it quickly. If you want an even more colorful dish, you can also add a red bell pepper. Coarsely chop the white onion. Set Crock Pot to Brown / cooking time 5 minutes. Add a little olive oil and sauté the onion.

Chop the potatoes and carrots. And we add them to brown.

After the 5 minutes are over, select the Beans program, cooking time 25 minutes. Add the lentils, water, tomatoes and spices (a pinch of salt, a pinch of pepper, half a teaspoon of paprika, a pinch of garlic).

In the end we have a delicious and healthy dish. If you want it to be a dish close to traditional cuisine you can add smoked meat or homemade sausages.

I added some Pecorino grated cheese and dill! It was crazy!

- 500 gr of pre-cooked green lentils, keeping the remaining liquid from it

- 120 ml of strained chicken or vegetable soup

- 1 teaspoon of crushed garlic

- salt and cumin, to taste.

The preparation method is as follows:

Chop the tomatoes, green bell peppers and onions and put them, together with the garlic, in a blender. Add the strained chicken (or vegetable) soup so that you get a homogeneous, fluid composition. At the end, add salt and cumin to taste. Then strain the vegetable mixture through a piece of gauze, to remain, at the end, with the base liquid. For this recipe I chose the dark green lentil (also called Le Puy lentils) because it keeps its shape very well when boiled, unlike the rest of the types of lentils that are crushed more or less when boiled (the most crumbly is the brown lentils ). Obviously you can use any kind of lentils you have available, but you must keep in mind that the cooking time differs (the one I use has the longest cooking time). Also, the look will be different, not only in color but also in texture. If you use for example brown or orange lentils that break easily, you will get a kind of lentil cream.

And I have a novelty in this recipe, a spice that I have never used before, Garam Masala, a spice specific to India that is obtained by mixing several flavors. I used this brand (see picture) which can be found in our stores through health food stores.

In preparing the stew, I was inspired by a recipe presented by Dr. Ramona Vuza, at one of the culinary demonstrations that take place frequently in the Casa Bio store.
